Lemon Shrimp Scampi was exquisite!

Nash’s is in North Vernon where Red Oak used to be. There were so many enticing things in the menu that we are going to have to go back!

So many students were missing school on prom day to get their hair, nails etc. done, they went to E Learning. As well, the elementary and middle schools have E Learning so here I am in my bathrobe and slippers enjoying breakfast 🍳 with my four legged fan club.

Breakfast of Champions. Bacon, eggs, whole grain toast with strawberry jam…and don’t forget the Diet Dew!!!

From here we will have a Google Meet this morning with the fifth graders asking for a tour of the Man Cave and some time with the dogs. 🐶 Most important, the Religion lesson is about not being lazy and working hard. 2 Thessalonians 3:6-12. Have a great day with Jesus at your side.

The culmination of the season took place at Sauers School with the tournament Monday night. A huge part of the tourney is the pork BBQ 🐽 dinner cooked and served by Marty and company. Delicious!!!

We journeyed to Key West on spring break and experienced several versions of key lime pie. The key ingredients are key lime juice and zest, sweetened condensed milk, and egg yolks; then served in a graham cracker crust.

Then, when we get home, turns out that Sam’s Club in Columbus has a key lime pie that pretty darn good. Kenlee shared this piece with me and it got two 👍 👍 thumbs up!
Heidi did get a recipe 📕 book, so expect to see a homemade pie 🔜.
Whoo Baby!!! What a way to
Enter The Keys! Alabama Jacks is a roadhouse type bar near Key Largo with live
🎼 music, cold drinks 🍺, and some great 🥘 food.

The main decor of Jacks is license plates and stickers from anywhere its customers may have been. (Dang! A Wintins Wigwam sticker would have come in handy right here.)

Fat Tuesday, or en francais, Mardi Gras, is a celebration before Ash Wednesday and the Lenten season. New Orleans and the Gulf Coast have big parades throwing out beads and Moon 🌙 Pies etc. the day before Jesus fasted and sacrificed for 40 days. (My simple translation)
Give it up to Heidi Wintin and her version of Fat Tuesday for us out here in Grassy Fork Township.

So, I am feeling Fat; and instead of giving up something for Lent, Heidi and I are vowing to walk and exercise regularly from Ash Wednesday to 🐣 Easter.
Have a great day with Jesus at your side!

A relaxing morning means a great 🍳 breakfast!!!
Dave’s Killer Good Seed bread has been a good way to start the 🥑 avocado toast topped with a medium 🥚 egg. Another piece with a bit of 🧈 butter and strawberry 🍓 jam and an orange 🍊 juice.
I will go into school 🏫 for some planning ahead. As well, the dogs will have a longer, yet frigid walk this morning. But after that, there will be some 🧐 serious sitting around in the recliner with a dog or two and maybe a cat on my lap while watch television.

We started with the roasted Brussels Sprouts with a Caesar type dressing. Fabulous!

Lawson had two mini cheeseburgers 🍔 with the smiley potatoes 🥔 that were tasty as well as fun to eat.

Heidi and I each had the Protein Bowl. I had the grilled chicken and she had the blackened chicken. It contained black 🫘 beans, quinoa, roasted corn 🌽 succotash, pico de gallo, feta cheese, Greek yogurt crema and guacamole 🥑. It was very filling, on the Mediterranean Diet and we could only eat about half, so we have lunch for tomorrow.

With 38% of our students out with the flu, we are having two days of E-Learning from home. That consists of sending some materials home ahead of time and a good internet connection.
Today’s feature, The 🤕 Beat Up Omelette (so called because it is in pieces) consisting of yellow, orange, and red peppers 🫑, avocado 🥑 and two 🥚 🥚 eggs. Seasoned with:

On the side, avocado 🥑 toast and Smuckers Strawberry 🍓 Jam on Dave’s Killer Bread toast.

The teachers have all posted their lessons on Google Classroom and are available to the students on-line when questions arise. It sure beats going to school in June!

We found a cauliflower crust a couple of weeks ago at Wal-Mart and have recently been eating much better via the Mediterranean Diet.
The crust was a bit fragile and had broken into pieces so we put it in an aluminum pie pan, a layer of spinach, turkey 🦃 pepperoni, diced red, yellow and orange 🫑 peppers, Ragu pizza sauce and topped mozzarella 🧀 cheese. We baked them in the oven at 425 degrees for about 12 minutes and the results were fabulous!

There was probably added sugar in the pizza sauce and the cheese had some extra calories, but the taste 👅 was spot on and the rest of the ingredients were as healthy as they could be.
Since the cauliflower crust is so thin, I think next time we put it in a pie pan again because it was so good this time.
