President’s Day Breakfast

A relaxing morning means a great 🍳 breakfast!!!

Dave’s Killer Good Seed bread has been a good way to start the 🥑 avocado toast topped with a medium 🥚 egg. Another piece with a bit of 🧈 butter and strawberry 🍓 jam and an orange 🍊 juice.

I will go into school 🏫 for some planning ahead. As well, the dogs will have a longer, yet frigid walk this morning. But after that, there will be some 🧐 serious sitting around in the recliner with a dog or two and maybe a cat on my lap while watch television.

B.J.’s Brewhouse: Protein Bowl

We started with the roasted Brussels Sprouts with a Caesar type dressing. Fabulous!

Lawson had two mini cheeseburgers 🍔 with the smiley potatoes 🥔 that were tasty as well as fun to eat.

Heidi and I each had the Protein Bowl. I had the grilled chicken and she had the blackened chicken. It contained black 🫘 beans, quinoa, roasted corn 🌽 succotash, pico de gallo, feta cheese, Greek yogurt crema and guacamole 🥑. It was very filling, on the Mediterranean Diet and we could only eat about half, so we have lunch for tomorrow.

E-Learning Breakfast

🤕 Beat Up Omelette

With 38% of our students out with the flu, we are having two days of E-Learning from home. That consists of sending some materials home ahead of time and a good internet connection.

Today’s feature, The 🤕 Beat Up Omelette (so called because it is in pieces) consisting of yellow, orange, and red peppers 🫑, avocado 🥑 and two 🥚 🥚 eggs. Seasoned with:

On the side, avocado 🥑 toast and Smuckers Strawberry 🍓 Jam on Dave’s Killer Bread toast.

The teachers have all posted their lessons on Google Classroom and are available to the students on-line when questions arise. It sure beats going to school in June!

Mostly Mediterranean Pizza 🍕 Bowl

We found a cauliflower crust a couple of weeks ago at Wal-Mart and have recently been eating much better via the Mediterranean Diet.

The crust was a bit fragile and had broken into pieces so we put it in an aluminum pie pan, a layer of spinach, turkey 🦃 pepperoni, diced red, yellow and orange 🫑 peppers, Ragu pizza sauce and topped mozzarella 🧀 cheese. We baked them in the oven at 425 degrees for about 12 minutes and the results were fabulous!

Heidi’s was a bit more colorful with diced cherry tomatoes 🍅 and baked to a golden brown.

There was probably added sugar in the pizza sauce and the cheese had some extra calories, but the taste 👅 was spot on and the rest of the ingredients were as healthy as they could be.

Since the cauliflower crust is so thin, I think next time we put it in a pie pan again because it was so good this time.

Blackened Mahi Mahi

We have been on the Mediterranean Diet (National Lutheran Schools Week has been a challenge for me) for two weeks and Heidi came up with this delicious and colorful meal tonight.

Blackened Mahi Mahi, 🥕 carrots, baby spring mix 🥗 salad with feta 🧀 cheese and poppy seed dressing. 💥

Even Liam agreed 👍 that it was pretty darn good!

As well, we have been eating Overnight Oats in various flavors for breakfast mixed with almond milk with good results.

At lunch today I had a sweet orange pepper with hummus and it was fantastic!

Mae’s Town House

Turkey Sausage, 🧀 cheese and mushroom 🍄‍🟫 omelette. This mostly met my Mediterranean Diet specifications.
Medium 🥚 eggs, bacon 🥓 and toast.

The Town House is back open!!! New ownership and Jade is the manager. Let the good times roll!!!

Since it was breakfast I didn’t get any, but, they did have peanutbutter pie. 🥧

After some productivity around the house, Heidi and I got another winter hike under our belts. 41 degrees and no wind made the 2.2 Trail #6 hike very enjoyable.

As well, we got in the hot tub while the 🌞 sun was shining. A wonderful Sunday.

Frozen Fog

Heidi was explaining frozen fog at dinner and I immediately knew what she was describing. I had stopped on the way to school this morning to take this interesting picture. However, I didn’t know it was called frozen fog. Proud to say that Heidi and I, along with our friend Stephanie Lambring, we are life long learners! You never know, “frozen fog” may be a Jeopardy answer some day.

Tomorrow is the fourth snow day this week and I have a daily challenge to be productive.

This was Wednesday’s project. Gas station sponsored maps from the 1950s with their logo on the compass rose fascinated me so I made this collage on top of a shoebox.

To prepare for snow day #4 we had 🥓 Bacon, BBQ Cheesebugers 🍔 on a 🥨 pretzel bun, Tater Rounds, and Knorr 🍜 noodles. Restaurant Quality!

As for the productivity for tomorrow, my idea 💡 of productivity and Heidi’s don’t always match up. I hope to exercise and continue the Man Cave organization project. Although it includes listening to 🎼 music and playing with sports cards, it can be work. Unfortunately, Heidi has to brave the elements while myself and the dogs stay in the cozy house. I’ll let you know how it turns out.

Squealers BBQ: Mooresville

On a roadtrip to See the grandkids, via Costco, we added on lunch at Squealers.

I had the three meat combo with brisket, rib tips, smoked sausage, 🫘 beans and a baked potato 🥔. But wait, the highlight may have been the fried biscuits with apple butter. The sauce was also superb.

The meats 🍖 were excellent and we are pretty sure we will dine there again.

We had to order more fried biscuits as Lawson was very fond of them.

Kenlee was loving 🥰 the brisket.
Back at the house 🏠 we relaxed with some candy canes and “Spidey and His Amazing Friends.”

Cast Iron Steak 🥩 House

Located on the Ohio River in Jeffersonville, the Cast Iron Steak House is a quality restaurant with great appetizers, 🍺 drinks, and entrees.

Macaroni and cheese bites, bacon wrapped BBQ 🍤 shrimp, caramelized 🧅 onion 🥓 bacon dip. Outstanding!
🥗 Salad with bacon, cheese,🧀 onion straws and Ranch dressing. 💥
Ribeye, seared in cast iron 🍳 skillet, then finished in the oven. Baked potato 🥔 with butter and sour cream.
Went to see the Christmas 🎄 lights in Charlestown after dinner.
Highlight of the day: Andi hanging on to my finger.

Grandkids Weekend

I finished the weekend with a round of December ⛳️ golf, not mention pitching some BP (batting practice) to Lawson this morning before ⛪️ church.

This ball is coming off the bat and hit me square in the chest. Look closely, the boy swiveled his hips for power!

After Lawson hit, he wanted to pitch to me. He said, repeating my coaching, “ level cut, level cut” and even stopped, picked up the bat, looking at me and said “level swing.” When I made contact, he was truly excited for me. 😊

Heidi, the clear leader of this unit, is exhausted and in bed by 8:30. Thank goodness for her!!! Shd hosted the Hackman Christmas Saturday and we went to the Melloncamp Christmas 🎄 at the Joe Jackson Hotel 🏨 in Vallonia. Cool spot for a gathering. Conveniently located across the street from The Bluebird.

Finally, I had lost 12 pounds on Weight Watchers since September and have gained 8 of the back in the lady two weeks.
